Day 17 & 18 & 19, A Work Out, and Recipes!

  
Day 17      
Day 18 went something like this.
 The big hits today were a Fried Shallots salad. (Fried in Olive Oil) Super delicious and much better than the store bought fried onions.

For dinner I originallywanted to make Chicken Georgia, but  realized we had a lot of left over pot roast. The guys had that, and I had some Cajun Salmon, green beans cooked in leftover pot roast juice, crinkle carrots, cucumber salad, and a fresh sweet corn cob.

I've had so much pot roast for the past 2 days that I think I am going to blow up. 

The way I make my Cajun salmon is so simple. I make it all the time, seriously! 
Cajun Salmon
1 tsp olive oil
McCormick Cajun Seasoning
Garlic Salt
Ground Black pepper

-Season to taste, and cook until brown on each side. I like my skin side slight black, as you can see. :) 

Day 19
 Breakfast: Strawberries and Cream Oatmeal made with water, 1 strawberry whey protein scoop with 2 tbsp 2 % milk and 3 large strawberries sliced.

Lunch: Fresh Tomato and Corn Salad with Chicken(Recipe Coming soon.)

Dinner: 2 hot dogs sliced with ketchup, mustard, sauteed onions in olive oil, and 1 cup romaine, 1 tbsp Ken's lite creamy Caesar dressing, 1bsp shredded Parmesan.
*Weird combo, I know. I went bun-less *pats self on back* I love hot dogs, my kids love hot dogs, everyone in this house loves hot dogs. Hot dogs do not love me. I wouldn't have bought them when we went grocery shopping but we had like 4 hot dog buns leftover from our camping trip that we needed to use before they went bad. It worked that I went bun-less because Travis could have 2 and the boys had 1 each.

Day 7

Breakfast: Apple Cinnamon Oatmeal with a Diced Gala Apple and extra Cinnamon on top

Lunch: Chicken and Zucchini Bake and 2 cups Sauteed Cabbage 

Snack: Granny Smith Apple Slices with 2 tbsp Creamy Reduced Fat Peanut Butter (I'm in an apple mood today.)

Dinner: 4 oz Salmon Fillet and 1 yellow Squash cooked in the pan with 1 slice of bacon, Mrs. Dash Original Blend Seasoning and Salt.

I came up with the Chicken and Zucchini Bake on a whim. (Recipe at the end of this post!) And I submitted to the Sparkpeople's Sparkrecipes. :)

Quick Work out for the night. I didn't feel like doing too much, but wanted to burn at least 100 calories. 






Chicken and Zucchini Bake


Ingredients

2 zucchinis, sliced length wise
2 banana peppers sliced
2 baby bell peppers
3 cooked chicken breast, diced

3 med tomatoes, and 4 plum tomatoes pureed in a food processor for sauce with 1tsp basil 1 tsp oregano 1 tsp garlic powder

1/2 cup mozzarella cheese

Nutritional Info

Fat: 3.1g
Carbohydrates: 12.7g
Calories:169.3
Protein: 23.6g



Layer zucchini, chicken, peppers and sauce ending with sauce. Bake at 375 for 45 minutes, then top with cheese and bake an additional 15 minutes.

Serving Size: Serves 4

Salmon with Cucumber and Strawberry Relish




Salmon:
4 salmon fillets
1/3 cup packed brown sugar
1 tsp ground mustard
½ tsp salt
1 tbsp olive oil
Relish:
¼ tsp dried basil leaves
1/2 tbsp extra light olive oil
1/2 tbsp lemon juice
1/8 tsp sugar
1 cup finely chopped strawberries
1 small cucumber, deseeded and finely chopped 

Directions: In a small bowl, mix the first 5 ingredients with the salmon, rubbing mixture on salmon. . Refrigerate, covered, for 1 hour. For relish in another bowl mix together the chopped strawberries, cucumbers, basil, oil, lemon juice, and sugar.
When cooking the salmon you may grill it accordingly. However I personally cooked it in a pan on medium heat, just spray the pan with a little cooking spray and cook until brown on both sides.



These pictures really do not give this recipe justice...but it was a really great mixture of sweet. Typically I don't like anything sweet but the combination of strawberries and cucumbers really works. I have more relish than necessary on my salmon because...I really liked it. :) I used some leftovers on top of yogurt..SO GOOD.



Now I am off to register my baby for pre-k. WAHHHH! I might cry. I just might.

Easy Salmon Caesar Salad

I think my favorite thing about Caesar salad is that it doesn't take much work to whip together. It doesn't really require a lot of chopped vegetables, so it's quick and easy.

I've been on such a kick lately and the thing that has really been taking my salads over the edge is sprinkling them with creole or Cajun seasoning. This salad is Delish!


1 skinless salmon fillet
2 cups chopped romaine lettuce
2-4 tablespoons shredded Parmesan
2-4 tablespoons Ken's Lite Creamy Caesar dressing
1-2 teaspoon creole or Cajun seasoning

Salmon Patties

I think, I have tried every tip and version of a salmon patty. And by far, this is my favorite and oldest recipe for them. You'll notice in the picture that the salmon patties have onions and green bell peppers. I like to toss those in whenever I have them on hand. Serve these with my HUSHPUPPIES!!


Salmon Patties 
Ingredients: (double the ingredients for more)
1lb cooked salmon or 1 can(pick out skin and bones)
1 egg
3-4 tablespoons of light mayo
2 tablespoons lemon juice
1 tablespoon Dijon mustard
1 green onion, sliced thinly
1 tablespoon parsley
1 teaspoon minced garlic 
a dash or 2 of cayenne

Directions:
Beat egg in a bowl, then mix everything in a bowl until it is blended. Take out small handfuls and roll in to a ball, then gently press in to a patty shape.  (This is where I do things differently, I bake instead of fry, because frying takes forever.) On a baking sheet that has been sprayed with cooking spray, place salmon patties. In a preheated oven at 400 degrees, cook patties for 15 minutes until golden brown on the bottom, then flip them, bake for an additional 15 minutes or until golden brown on the bottom.

Shrimp Salad Pitas

Ingredients:
  • 1 package of salad shrimp, thawed 
  • 1 cup chopped salad lettuce (romaine, iceberg, or mixed)
  • 1/2  tomato chopped
  • 2 tablespoons (give or take) of either plain greek yogurt, reduce fat mayo 
  • A pinch of sugar 
  • Reduced Fat, or 2 % cheddar cheese 
  • 1 whole wheat or multi-grain pita 
Directions:
Saute your salad shrimp in a small pan with a little bit of lemon juice and soy sauce. Mix together shrimp, lettuce, tomato, mayo, and a pinch of sugar together in a bowl. Cover pita with a wet paper towel and heat in the microwave for 30 seconds. Make two layers inside your pita starting with salad mixture followed by cheese, repeat. Dig in. :)

(Note: I think in the picture I added cucumbers, because I needed to get rid of them, but if you don't want to that's okay! I like it better without cucumbers.)

Egg roll Cray-zay!



I have been trying to find my food journal for WEEKS. Because usually when I come up with a recipe on a whim, I write everything down so that I do not forget how I made it the first time. There is this AWESOME recipe I came up with  awhile back, originally for the hubs because I don't usually eat spicy food. However, I tried it just to see how it tasted and it was delicious.

When I say egg roll crazy, I did go a little crazy making egg rolls after I discovered where they were located in my grocery store. I've always wanted to try and make my own, I don't like the idea of fried food anymore because  it upsets my stomach after eating relatively clean for awhile. When I found the wraps in the grocery store for buy one get one free, I couldn't resist. :)  So without further ado here are some awesome alternatives to the egg rolls you find in the Chinese restaurants and a little creation I came up with myself. First I tried a shrimp egg roll using salad shrimp and broccoli slaw.

Shrimp and Broccoli Egg Rolls 

You will simply need:
Small packs broccoli slaw mix (you can regular slaw mix)
1 Package salad shrimp (frozen section)
1 egg roll package
1 egg
Olive oil
salt & pepper

Directions will be difficult for me to explain because I didn't really measure anything. The egg roll package itself will explain to you how to roll it. The egg is mixed with 1tbsp of warm water and used to seal the egg rolls shut. So, basically put a little bit of slaw on your wrap, a little bit of shrimp, roll it almost as if rolling a burrito, brush egg mixture along side to seal the end of the egg roll wrap. Brush olive oil on a baking sheet. Once you've rolled and prepared all of your egg rolls brush them all with olive oil as well. Bake at 350 degrees until rolls are golden brown.




Creamy Buffalo Chicken and Jalapeno Egg Roll/Mix 

So THIS is my happy accident creation! Not that it was very hard to do. This went in to an egg roll and we dipped the egg rolls in to ranch. This mixture could also go in to a flour tortilla wrap as well for something delicious. Either way, try it you'll like it! 
Ingredients:
2 pieces of cooked boneless skinless chicken, shredded
2 ounces cream cheese
1/2 cup jarred jalapeno slices
1/2 cup Franks Red Hot Buffalo Sauce 
Olive Oil
1 egg with 1Tbsp hot water whisked together. 
salt & pepper to taste

Directions:
I used leftover chicken for this but if you need to, bake and cool your chicken. Preheat oven to 350 degrees. Brush a baking sheet with olive oil., lightly. Then shred in in a small bowl with the cream cheese. This will help the cream cheese mix with the chicken. After that mix in you jalapenos and buffalo sauce. I'd say about 1 heaping tablespoon of mixture should go on your egg roll wrap. Wrap it up and seal with your egg and water mixture. Brush the tops of your eggs rolls on the baking sheet with olive oil. Cook in the oven until golden.

Just some food!:)

Cucumber and Dill Salad from Martha Stewart. 


Salmon Nuggets! Dip chunked salmon in a lightly beaten egg, then in Italian bread crumbs and bake.


Mmmm, Salmon nuggets, Cucumber and Dill salad, green beans and potatoes, and sauteed summer squash!

Fresh green beans and new potatoes in the crock pot. A little bouillon cube, and a little garlic, a little Worcestershire sauce and whatever else I like.

Mini pancakes, PB&J sammies for the boys.

Fruit in the dehydrator. Yum!

Veggie Burrito and baby carrot lunch. Nom.

Quick Honey Mustard Shrimp and Edamame Succotash *and cuddles!



 Quick and Easy Honey Mustard Shrimp Bake
1lb, 16 oz bag Shrimp, medium, peeled 
1/2 cup Ken's Lite Honey Mustard 
1/2 an onion sliced 
(Sprinkle with chives and/or garlic according to taste) 

DONE. So easy. 

I was really feeling some succotash. So I whipped this up. It is nothing special but it got my craving for succotash satisfied. Except I didn't have lima beans. But this was really a great thing to do with the frozen edamame beans I had in the freezer. 

Edamame Succotash 
1 can petite diced tomatoes 
2 ears of corn, shaved 
1 cup edameme beans 
Dash of Worcestershire sauce  
Salt and Pepper to taste 
  Just mix everything together in a small to medium pot, heat to boil, then turn it down and simmer with the lid on. Easy peasy! 


And this is to lazy, no make up, hair a mess, cuddly Disney movie days with the boys all on one glider! <3<3

And kitty cuddles too! 

 
  


Birthday festivities!

All of my recent posts haven't been saving so I am going to try to redo them all in separate posts it'll just have to say that it was all on the same day! Oh well!

My husband's birthday was this past week and for like 2 weeks I've been off on my healthy eating because we've been eating out so much and having so much birthday cake UGH! 

So the 6lbs I lost are roughly back probably. I'm afraid to weigh myself. I have been doing a few leg, butt, and ab work outs. Every few days so we'll see how that goes. It may not tip the scale but I can def feel the soreness. 

The hubs and I going to a birthday dinner with some family. We were riding in my husbands old jeep wrangler with no doors and the back top off. Wouldn't you know, it starts to rain. My hairs a mess,  and I have to put on his work coat to keep dry and warm. lol AND OF COURSE, he cannot just take a NORMAL picture. 

As for lunches I've kept it pretty healthy despite my restaurant dinners lately, we've had a lot of wraps, sandwiches or burritos.




Shrimp and Zucchini Burrito Wrap

 

Ingredients:
 1 package salad shrimp (these are tiny little shrimp) 
1 cup small chopped zucchini 
1/2 of a small tomato chopped 
1 tsp chopped garlic 
Salt and Pepper to taste 
Burrito tortilla (try to find one that is whole wheat low in cals and packed with fiber) 

Basically just saute this all in a pan, use a little olive oil if you do not have a nonstick pan it takes no time at all since the salad shrimp is basically cooked already you're just heating it up. So if you like your veggies soft you may want to start those before adding the shrimp. This is really easy and quick for lunch! I added some apple slices to mine to make it a meal! :) 

The boys had this for lunch and after making it I was like, this is genius. I should've done this a long time ago. I love broccoli and cheese soup or just broccoli and cheese in general, WHY NOT PUT BROCCOLI IN A GRILLED CHEESE? RIGHT? I had to make myself one the following day for breakfast! lol  




 So deliciously yummy! I feel like I shouldn't have to explain how to make a grilled cheese to people so I will not add anything special about the sandwich. Just add broccoli between your bread and cheese slices and make it they way you usually do. Blake loved it, but that is because he LOVES broccoli. Liam was pretty much acting like, "Woman! You can't fool me!". I have tried everything in the BOOK to get Liam t eat his veggies, he will not do it! One day this kid is going to eat them because I am NOT giving up!
