Ingredients:
- 1 package of salad shrimp, thawed
- 1 cup chopped salad lettuce (romaine, iceberg, or mixed)
- 1/2 tomato chopped
- 2 tablespoons (give or take) of either plain greek yogurt, reduce fat mayo
- A pinch of sugar
- Reduced Fat, or 2 % cheddar cheese
- 1 whole wheat or multi-grain pita
Saute your salad shrimp in a small pan with a little bit of lemon juice and soy sauce. Mix together shrimp, lettuce, tomato, mayo, and a pinch of sugar together in a bowl. Cover pita with a wet paper towel and heat in the microwave for 30 seconds. Make two layers inside your pita starting with salad mixture followed by cheese, repeat. Dig in. :)
(Note: I think in the picture I added cucumbers, because I needed to get rid of them, but if you don't want to that's okay! I like it better without cucumbers.)
