Shrimp Salad Pitas

Ingredients:
  • 1 package of salad shrimp, thawed 
  • 1 cup chopped salad lettuce (romaine, iceberg, or mixed)
  • 1/2  tomato chopped
  • 2 tablespoons (give or take) of either plain greek yogurt, reduce fat mayo 
  • A pinch of sugar 
  • Reduced Fat, or 2 % cheddar cheese 
  • 1 whole wheat or multi-grain pita 
Directions:
Saute your salad shrimp in a small pan with a little bit of lemon juice and soy sauce. Mix together shrimp, lettuce, tomato, mayo, and a pinch of sugar together in a bowl. Cover pita with a wet paper towel and heat in the microwave for 30 seconds. Make two layers inside your pita starting with salad mixture followed by cheese, repeat. Dig in. :)

(Note: I think in the picture I added cucumbers, because I needed to get rid of them, but if you don't want to that's okay! I like it better without cucumbers.)
