Two-fer Buffalo Ranch Chicken Sandwhiches for Dinner, and a Buffalo Ranch Salad for Lunch.


I've talked about making buffalo chicken egg rolls, and buffalo chicken in wraps. But not buffalo ranch chicken on buns, followed by buffalo chicken salad. It's delicious, and easy! I usually make this for just Travis and I. Then I'll make the boys something different. I can't wait until the boys go in to the boy-guy-man phase of liking spicy things. When I make this for just Travis and I we usually have it for dinner and lunch the next day.


This is a slow cooker meal, so drag out your crock pot.
Ingredients for Chicken:
4 boneless skinless chicken breast
1 cup Frank's Buffalo Sauce
1 dry package hidden valley ranch mix
1/2 cup of water

Mix everything together, and cook on lo for 6-8 hours. Shred chicken with fork and serve on toasted buns with a little ranch dressing on top.

Salad ingredients:
1 cup romaine chopped
1 celery stick shredded
1 carrot stick shredded 
1 summer squash shredded
1 small tomato diced
2 tbsp shredded cheese
1/2 cup shredded buffalo chicken mixture
Light Ranch dressing

Leg Workout and an Easy Dinner

This is an amazing leg work out combo that I've put together. Prepare to be sore!
 

Heinz 57 Chicken with Smashed Reds and Green Beans

 And this is something really quick and easy I put together on lazy nights that I don't feel like putting much effort in to dinner. This chicken is versatile enough you can grill it, bake it, or slow cook it in the crock pot. I use baby reds because I actually like eating the skins on those.
Chicken: 
1bottle of Heinz 57 sauce
4 boneless skinless chicken breasts
Salt and Pepper to taste

Sprinkle both sides of chicken breasts with salt and pepper, place chicken in a glass baking dish and cover with heinz sauce, cover with foil and bake at 375 degrees for 45 minutes or until done. Or grill or slow cooker on Lo 6-8 hours. :)

Smashed Red Potatoes: 
Baby Red Potatoes  
Shredded Cheese
Bacon Bits

The quantity depends on your family. Cover the bottom of a medium to large glass baking dish with just enough water to cover the bottom. Add baby reds whole in to the glass baking dish, and bake until they are soft along with your chicken. Smash all the potatoes while they are still in the glass baking dish and leave them as is. Sprinkle with garlic powder, salt, and pepper. Drizzle with extra light olive oil. Sprinkle with cheese, real bacon bits, and green onions.

Creamy Buffalo Chicken Wraps in the Slow Cooker


Ingredients:
1lb boneless skinless chicken breasts
1onion sliced
1/2 of a green bell pepper, chopped
2 tbsp diced jalapenos (optional)
2 oz cream cheese, room temperature
1/2 cup Frank's Buffalo Sauce
Whole wheat or Whole grain Wrap 

Directions:
First things first set your slow cooker on lo and add your chicken to it. Then prep your veggies and add them along with the Buffalo Sauce. Mix together. (I say 1/2 cup but this is really an eye-ball it situation. I just use enough sauce to cover the chicken and it is usually 1/2 cup which is also usually half a bottle.) Cook on Lo 6-8 hours. Add the cream cheese during the last 30 or 15 minutes.

go AWAY rain

I'm not one to usually complain about rain. I LOVE the rain. I love rainy days and how lazy they feel. I love having a nice warm, soul soothing meal on said wet, chilly, rainy days.

We've had so much rain the last few weeks though. The boys haven't had a chance to really play outside in awhile because it was either raining or too wet to play outside. Now the ground is super wet and messing up my routine.

I currently cannot flush my toilet.

I can't wash clothes for a few days.

I can't wash dishes unless its really quick, so I'm just going to do it once a day. I think I'll ask Travis if he minds going to the store to get some plastic plates.

We have to take super duper quick showers. Blake will take a shower pretty well, but Liam is terrified of it. I usually always give them a bath together.

I'm kind of miserable right now. I thought I'd whine about it on my blog.

 I've been trying to do fun things with the boys. I have a box in my cabinet above my washing machine and dryer that I call, "supervised fun box", it has playdough, flarp, silly string, crayons, and coloring books. That has been pulled out a lot lately. Blake asked me earlier if he was good could he play with playdough. I guess, yes! We pulled out puzzles, hi hi cherry-o, and candyland yesterday. Blake got a 24 piece Angry bird puzzle for his birthday and loved it. We ut it together, together. I showed him strategies such as looking at the flat edges, corners, and starting on characters and then plugging them in with the other pieces. Then I remembered that we had another 24 piece Winnie the Pooh puzzle from forever ago that we haven't put together. I put it up so that it wouldn't get messed up. I didn't think he was ready for it yet, but now he is. He put the Winnie the Pooh one together almost all by himself. He had help from me once. I think its really great for his patience. I've been trying to discipline more by time outs, sending to his room, then after he calms down I'll go in his room and talk to him about what he did wrong and what he needs to do from now on. Raising kids= difficult. I've been doing a lot of soul searching over the last year after moving in to our own home and I just want the boys to be wonderful boys. Polite, southern gentlemen. I want my future daughter in laws to thank me for raising such great men. I think this has come about lately because Blake is going through a bossy, angry, and selfish stage. One thing I can say about Blake, which is both good and bad, is that he is like the Robin Hood of toddlers. lol If he sees anyone being mean to a kid, hitting, or disciplining them he will yell at them and try to hit them back (if they are hitting). He does this especially for my little brother and his little cousin when they get in trouble.

So, as you can imagine...being inside all day had been tough. They aren't getting enough energy out. I wish we didn't live so far away from cities and towns sometimes, because then I could take the boys to an indoor gym or just anywhere fun. BLEH! I pinned a few cute ideas on pinterest for us to try and do. Unfortunately, I really need to stock up on some craft supplies and maybe make a list so that I can start doing more things like that with them. I love doing crafts, especially kid crafts. :) My trouble with the boys is losing patience with them. I'm thinking Blake is old enough now to where I could let him know what to do, guide him, but still do a lot of helping with Liam. It would probably be great for Liam to develop language skills. That will be my rainy day plans. Indoor fun! Since apparently there are some cleaning chores that can be ignored for now. =|

True to my tradition, what would a rainy day be without a slow cooker meal? I identify slow cooker meals with the same soul warming feeling meals like soup and chili give. So this is definitely a new favorite of mine!

Provencal Chicken and Beans 

Provencal anything is typically made with garlic, onion, mushrooms, tomato, olive oil, and Herbes de Provence. So as you can guess, this dish is french. Herbes de Provence is something you can create if you have a good stash of dried herbs or you have your own herb garden.


  Ingredients
  • 24 oz boneless, skinless chicken breast
  • 1 small onion, sliced
    1 yellow bell pepper, diced
    1 red bell pepper, diced
  • 1 8oz can sliced mushrooms or 1/2 cup sliced fresh mushrooms
    1 (16 oz) can cannellini beans, drained and rinsed
    1 (14.5 oz ) can petite diced tomatoes with basil and
    oregano or any style of canned tomatoes
  • 2 1 tablespoon herbes de provence  
  • 1 dash salt
    1 dash black pepper
  • 1 clove or garlic
  • OR instead of Hebes de Provence
    2 teaspoon dried basil
    1 teaspoon dried thyme 
  • 1 teaspoon oregano

·         Directions
·         Place all ingredients into a slow cooker, stir and cover with lid; cook on low heat for 7 hours. Add beans at the last 30 minutes, and turn to high. Otherwise your beans will become too cooked.  Makes 6 one cup servings.

Catch up, ketchup, hey hey hey!

Yeah, I don't know what is up with that title. Just sounded nice. :)

First excuse my last post, that was from Liam. He had my phone earlier, so I am going to guess that he had fun punching in numbers and letters in my blogger app.

Second, I am going to post a few posts tonight separate.

So I'll start this night off with a crock pot recipe!<3



Creamy Chicken and Sausage
There’s a lot you can do with this recipe. You can leave your chicken breast whole and serve it over rice, or you can shred your chicken and use it as a filling in a tortilla. Use your Crockpot!:) 
 
Ingredients:
·         3-4 boneless skinless chicken breast
·         1 jar chunky salsa
·         1 healthy smart can, cream of mushroom, cheddar or chicken soup
·         1 lb cooked and ground sausage
·         1 can pinto beans, drained 


Directions:
First things first, cook and ground your sausage, drain it then place it in a bowl. In that bowl stir in your salsa, cream of soup, and drained pinto beans. Place your chicken breast in the crock pot, and then pour the sausage mixture over the chicken. Cook in the Crockpot, high for 6-8 hours. 

This is delicious, and it freezes well.

Last Day On Earth


Basically, I just wanted to say that I kicked today's ass. I really didn't feel like doing anything but I was very productive. I washed all our laundry which is A LOT since I was at my moms for a week. Catch up on laundry sucks. I'll fold it all tomorrow. I swept, cleaned, hoed the garden bed outside...just a number of things.  That I will post about more tomorrow because I really need to get that shower and snuggles before I blow up. Just in case. 

Pot Roast                                                                          

 
Ingredients:
Chuck Roast
1 package dry ranch dip mix
1 package dry italian dressing mix
1 package dry brown gravy mix 
2 bay leaves 
3 cups water 
Veggies (potatoes, onions, carrots, celery)

Add all ingredients in to a slow cooker on high and let it get tasty. I would say put it on for 6-8 hours. Every crock pot is different. Mine is a little older but I love it so much that I refuse to get rid of it because it works. I just look at the new shiny ones and think, "SHOW OFF!". So yeah, adjust times according to your slow cooker. :) 

Now I need to hop in the shower. 15 mins until end of world.
