Ingredients:

1lb lean ground meat
·
2 bell peppers, sliced in half and deseeded
·
1/3 cup BBQ sauce, plus more for topping( 4
tbsp)
·
1 egg
·
1 onion, diced
·
2 carrots shredded
·
1 cup zucchini or squash shredded
·
¼ cup cheddar cheese
·
1 tsp minced garlic
·
1 tsp onion powder
·
1 tsp paprika
·
Salt and pepper to taste
Directions: Preheat oven
to 375 degrees. Slice your bell peppers, removing insides, stick in a large pot
of boiling water, enough water to cover them. While your peppers boil, mix
together your meat, bbq sauce, egg, onion, carrot, zucchini, garlic, onion
powder, paprika, and salt and pepper together in a bowl. Take your peppers out
of the water and add them to a glass baking dish. Divide the ¼ cup of cheese
evenly among the pepper slices making sure to stuff the cheese on to the bottom
of the peppers. Add your meat mixture on top of the cheese pushing it down to
fill the pepper. Top each stuffed pepper with about 1tbsp of BBQ sauce.
Serve with roasted
broccoli and macaroni and cheese. You have yourself a meal, and its rather
healthy if I do say so myself.
