Ingredients:
1 c. sugar
1/2 c. brown sugar
1 c. oil
3 eggs
1 lb. can pumpkin
1 1/2 c. flour
1 1/2 tsp. baking soda
1 1/2 tsp. cinnamon
1 1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla

First mix together your dry ingredients in a large bowl. Slowly stir in your wet ingredients. Beat together well for 5 minutes.
Pour the batter in to greased muffin tins filling them about 3/4 full. Bake at 400 degrees
for 20 minutes for regular sized muffins, for mini muffins bake for about 8-9 minutes oven times always vary depending on oven so a good idea is to just watch for golden brown-ness. This batter made two batches of mini muffins plus 6 large muffins for myself.
