Adorable Meatloaf Cupcakes

Apparently, today is a day of adorable food posts. But my next recipe I want to post is a sweet meat loaf baked in a large cupcake/muffin pan, topped with garlic mashed potatoes as "frosting" and it has bacon and chive sprinkles.

And, it's tasty!

And cute!

What's not love for a picky eater?


First, I start making the mashed potatoes, and the meat mixture. These pictures are off my phone so they'll be mixed up a little bit.

Garlic Mashed Potatoes 
4 large russet potatoes 
2 tablespoons butter 
1 clove garlic 
1/4 cup light sour cream 

Peel, dice, and boil potatoes in a pot of water, just enough water to cover the tops. Boil until they are falling apart on their own. Drain the water, put the potatoes in a bowl and mash in butter. Stir in butter, garlic, and light sour cream. 

Meatloaf Cupcakes
Ingredients:
1lb ground meat
1 orange bell pepper, diced
½ sweet onion, diced
¼ cup marinara
¼ cup bread crumbs
1 egg
Ketchup
Directions: Mix everything together in a bowl. Add meat mixture in to large muffin tins. Add enough ketchup on top of meat mixture to glaze. Bake at 400 degrees for 30 minutes, set a muffin tin on top of a small cookie sheet before baking just in case. This should make about 12 “cupcakes” or 6 large.

To form the “meat cupcakes” place your meatloaves on a baking dish. Take a sandwich bag, stuff it with mashed potatoes, and cut the corner of the sandwich bag to make a piping bag. Squeeze the mashed potatoes out on to the meatloaves. Used crumbled bacon and chives as sprinkles. 


Make sure to boil your diced potatoes until they are falling apart.
4 large russet potatoes, peeled and diced.
Stuff your meat mixture in the muffin tins.
